Oh Goodness.

Once a week has been my goal for posting….as we can see that hasn’t happened. BUT once a week recipes have been happening!! And it has been wonderful!

So I am going to give you all a lovely rundown of how wonderful January was in my kitchen 🙂

My Savory Adventures

Baked Macaroni and Cheese my slight variation included jalapeno chicken sausage, broccoli, and Aardvark hot sauce. It was my first time making my own macaroni and cheese and it is something I want to keep making and perfecting.

BBQ Beer Crockpot Pulled Chicken and Jalapeno Cilantro Coleslaw : so very very good! The chicken turned out great I didn’t have the entire 4 cups of BBQ sauce but it was ok with just under 4. Next time I would add more heat, possibly cook with jalapenos (if you can’t tell we eat a lot of jalapenos/spicy things in our house). In my opinion coleslaw and pulled chicken or pulled pork go together perfectly! I cannot imagine a pulled anything sandwich without coleslaw on top and this recipe was a winner. It got spicier everyday and was better. I would recommend making it ahead to get the full spiciness. I love an easy crockpot recipe and this whole meal was wonderful.

My Sweet Creations

I am from California originally and grew up with an orange tree in my backyard. In my opinion the best oranges ever 🙂 since living in Portland something that I have missed has been good oranges, they are just not the same here. Luckily I have parents who love me and will send me boxes of oranges. In an attempt to devour their goodness before they spoiled I made my childhood favorite Orange Muffins. These taste like sweet Saturday mornings with my dad 🙂 With this recipe do not be afraid to add lots and lots of more orange zest.

For a work meeting I was asked to my gluten free cupcakes and I was so excited! I want to bake with my life, it is my favorite thing in the world. I used coconut flour for both cupcakes and they were delightful. There is a Vanilla Cupcakes with a Buttercream covered in toasted coconut and a Chocolate Cupcake with the same Buttercream with a cinnamon dusting.  If you have food allergies this is a great website to go to. The only variation I made in the recipe is that I used honey instead of agave, but I have used agave and it is just as good.

 

That’s what I can remember from this last month. So many things to look forward to in February! Lots of baking! 3 years with my guy! Adventures around every corner 🙂

Jalapeno Cheese Buttermilk Biscuits

ImageOh yes, they are this amazing. Spicy and delightful. I got the recipe from Homesick Texan blog. I used her “Everything Is Better With Biscuits” and I added 2 jalapenos and some pepper jack cheese (about 1/4 lb.). They are amazing I don’t know if they will last the night…I am going to go get another 🙂

 

I also tried this recipe this week: Fried Citrus Salad it was really good and it made me miss summer.

Once A Week.

For this new year and this new life I am starting with my husband, I wanted to try something new. Specifically I want to try lots of new things. These are base goals and obviously I want to do more then this but here is where we start:

Once a week: I will bake something new. I will cook something new. I will intentionally give into a relationship (a phone call, a letter, a CD, a note, etc.)  I will spend a day being creative for me.
